Your question caught my attention since we built our 2019 Catalyst project on Mercato's low code platform (KnowledgeKube). This was demonstrated in the form of a digital marketplace. The purpose of the catalyst was demonstrating the monetization potentials with 5G: "
5G Profitable Lifecycle".
We showed the ease of building a complex marketplace allowing the combination of a product, Drones in our case, together with the relevant 5G slicing service, combined with intelligent offers, such as drone insurance from a 3rd party, could be provided to a buyer, depending on how the drone would be used.
The single order was then decomposed and allocated out for logistics.
The Catalyst has resulted in several opportunities where large telecom providers are looking towards implementing this low code solution.

We have had a number of NFV related catalysts that have used a configuration based approach which is equivalent to your term Low-code.
Notably these catalysts have won numerous awards as this approach has demonstrated concrete practical approaches to business agile . the two prominent companies leading these catalysts have been cloudsoft, Dgit, EnterpriseWeb and Huawei among others
