You are correct on your point. Bypass EMS for a complex telecom infrastructure is very difficult but for new green field telecom company or small geography operator we can think of centrally managed system for VNFs
VNFs can be managed in ways like:
1Configuring the traffic for different VNF instances
2.packet reordering for transient traffic before the disconnection of existing
3. manage multiple VNFs (state of stateless)
Adoption of vendor agnostic FMS and performance system is a evolving idea but still we are in phase of thinking of SLA management of virtualised system

Let's have chat on this as this is the essence what we do as a company: offer a Carrier/Enterprise grade framework for hybrid, multi-vendor network orchestration / automation.
We actually recommend to bypass the vendor's EMS and configure & control the device centrally via netconf/ssh/telnet. And manage all (V)NF's config & network changes in a vendor agnostic, top- down and intent-driven way.
I personally believe the EMS concept is outdated. Like there has been for years an big adoption of unified solutions (multi vendor) Fault & performance solutions (Spectrum/HPOV/NMI/AssureNow/SevOne etc), we strongly believe in a unified m/v configuration & change management solution.

NFV orchestration is very much needed for automation, provisioning and management of virtual resource. The orchestrator should be highly secure and reliable to connect the existing EMS to new virtualized environment. The myriad of standard bodies who are defining the MANO platform (ETSI,opendaylight, openstack etc) in sync with multivendor dependency can create a challenge in deployment. Eg. Some standard framework does not support carrier grade . So, how should we manage this multi standard , multi-vendor and multi VNFs for making a single well managed virtualized environment?
